Bietighofer Sauvignon Blanc Grande Reserve 2021

This wine lines the entire mouth and delivers complex flavors. The aromas are reductive and smoky with notes of ripe gooseberry and lemongrass while the palate is slightly oily and vegatal like charred shisito peppers. Bone dry yet with plenty of power, but still bringing great aciditiy and freshness. Serious aging potential and many pairing possibilities. Aged for twelve months on the lees in neutral French oak then bottles unfined and unfiltered, but like all of Bietighofer's wines, they do not present as your typical "unfined and unfiltered" natural wine. One of the most compelling Sauvignon Blanc's out there at the moment.
