“Les Béguines” is Jérôme Prévost’s flagship cuvée, a Champagne that rewrote the book on what Pinot Meunier can do. The [LCO22] release is based entirely on the 2022 harvest, but labeled non-vintage by choice. As always, it’s from a single parcel of old vines grown on chalky clay in Gueux, and vinified in barrel with native yeasts and no fining or filtration. The wine is textural and structured, more vinous than sparkling in spirit, with notes of ripe citrus, red berries, baking spice, and wet stone. There’s real tension here—the mousse is fine, the acidity driving, and the finish long and savory. It's Extra Brut, but balanced and layered rather than severe. Best enjoyed with food—roast poultry, mushroom dishes, aged cheeses—and even better with time in the glass or the cellar. A bottle that rewards patience and close attention.
