Montgueux, often called the "Montrachet of Champagne," is a hill of chalk and old Chardonnay vines in the Aube—far from the Côte des Blancs, but with terroir that delivers explosive fruit and vivid minerality. Jacques Lassaigne, a tiny, independent grower, works biodynamically and ferments each parcel separately, using mostly neutral barrels and no manipulation. Vignes de Montgueux is his flagship cuvée: 100% Chardonnay, Extra Brut (minimal dosage), and loaded with personality. The nose offers lemon zest, green apple, and chalk dust, with floral and herbal complexity. On the palate, it’s zippy and taut, with a creamy mousse, mineral cut, and a long, saline finish. There’s fruit here, but no fat—just focus and finesse. This is Champagne for purists—transparent, site-driven, and soulful. Ideal as an aperitif or with oysters, salty snacks, or creamy cheeses.
