The Sparkling Tea concept emerged in 2010, pioneered by acclaimed sommelier Jacob Kocemba while working at a prestigious Michelin-starred restaurant in Copenhagen, Denmark. Tasked with pairing a dessert but unable to find a suitable wine from a cellar boasting over 1,700 options, Kocemba turned to tea for inspiration. He crafted a unique extract by combining a selection of premium teas, unveiling a world of untapped potential in tea-based beverages. This innovative creation quickly gained popularity, becoming a beloved choice among the restaurant’s patrons. BLÅ is based on a careful selection of 13 organic teas, which are brewed at different temperatures and time intervals.
