This special soil imparts a distinct mineral taste to the wine, significantly influencing its flavor profile. Prosecco is produced using the Charmat method, starting with a base wine made from Glera grapes that undergoes a second fermentation in stainless steel tanks. The process is deliberately slow, lasting at least 8 weeks, which refines the perlage, making it fine and crispy.
