
Dong Ding Oolong Tea
Description Tasting Notes Origin Brewing Flavor: Caramel, nutmeg aroma. Notes of honey-roasted cashews and savory pastry. Complex, sweet/savory finish. Garden: This batch of tea comes from Phoenix Village, next to Dong Ding Mountain in Lugu. It is the roasted version of our Traditional Dong Ding Oolong — harvested from our friend's family tea garden in their backyard and processed the way his grandpa used to (but with the help of machines!). The leaves were groomed post-production to remove excess stem and overly mature leaf material. Harvest: Hand picked, singular small batch. Spring 2025. Fenghuang, Lugu, Taiwan. Elevation: 700m Dong Ding Oolong is a medium oxidized, medium roast tea with a hearty, complex, and robust character. The leaves were roasted 3 times over a few weeks, beginning at 90°C and ending at 123°C. It's a subtle and skilled roast that offers a fine balance of sweetness from the oxidation effect along with robust notes from the roasted effect. The initial st
