The Land The Paul Nicolle Chablis Vieilles Vignes is sourced from 14 hectares of vineyards located in Fleys, Chablis, Chichée, and Béru, all of which are in or near the village of Fleys. The soils are the classic Kimmeridgian limestone, which is vital to the character of this region. These particular vines are 35 to 45 years old, and are managed with a clear emphasis on sustainability, having received High Environmental Value certification. The majority of the holdings for this estate are in the AOC Chablis classification, with holdings in two different Premier Crus as well. The Wine This 2023 Chablis is 100% Chardonnay that offers a textbook example of the region's classic style. The wines are fermented using selected and natural yeasts (depending on the tank) with malolactic fermentation and aged on the lees for 8 to 12 months in stainless steel tanks, with 10% of the wine seeing used barrels. The result is a wine that is light and crisp, with a clear focus on expressing the purity a
