Colombia Vergel is a beautiful coffee grown surrounded by guava trees. A unique variety, yellow and red caturra, produces a fruity and distinct cup. The process begins with carefully selected red and yellow caturra coffee cherries, which undergo a 60-hour fermentation. Initially sun-dried on raised beds in a “Marquesina” to 30% moisture, the beans are then mechanically dried in circular dryers at temperatures below 45°C until reaching 16%-18% moisture. After a pre-stabilization stage to enhance flavors, the drying process is completed to achieve optimal moisture. This meticulous anaerobic process creates a rich, complex flavor profile with notes of chocolate, plum, guava, red fruits, and tangerine.
