Our current Decaffeinated offering: our Colombia La Union Decaf.  Decaffeinated using the Ethly Acetate method, sometimes called Sugarcane process decaf.  By combining Ethyl Alcohol and Acetic Acid (alcohol and vinegar), both derived from fermented sugarcane, we get a mild solvent that gently removes caffeine from the coffee beans before we roast them.  This preserves the flavor of the beans well, while removing most of the caffeine.  In this case, the coffee has rich notes of mixed nuts, dark chocolate, and a hint of toasted wheat.
