Red Fife is a heritage wheat which originated in Ukraine and was brought to Ontario by farmer David Fife in 1840. Red Fife was then grown in the US by Wisconsin farmer J.W. Clarke in 1860, and remained popular for several decades. Class: Hard Red Winter Wheat Available types: Type ‘00’, Whole Wheat Grown by: TYR Foods Protein: 14.5%  Flavor profile: Mildly malty and wheaty, with a slight spice undertone  Best for: Cookies, Muffins, Crackers, Choux, Pasta and as a 20% addition to sourdough loaves
