About the Winery:Domaine Pierre RAVAUT is a family estate of 7.5 hectares, located in Ladoix-Serrigny in the Côte-d’Or, between Beaune and Nuits-Saint-Georges, at the foot of the hill of Corton.Pierre and Anne-Sophie, both natives of Burgundy born into winemaking, work on and manage the Domaine, controlling every step involved in looking after the vines and making the wine, respecting tradition and demanding quality. The Domaine is worked using environmentally friendly methods known as “la lutte raisonnée” and the soil undergoes regular seasonal tasks (spiking, tilling…).It is harvested manually by a team of experienced grape pickers. The vinification is very traditional (grapes are selectively sorted, de-stemmed if the grape variety requires it, open vats are used with daily pigéages and a 10 – 15 day fermentation period). However, significant improvements have been made thanks to thermoregulation and the analytical monitoring. The wines are aged and refined in French oak barrels fo
