Unoperuno, or "one by one", is a special project of the Altare family. It began with a challenging vintage in 1986, when the Nebbiolo grapes were so damaged that the family had to destem and sort each bunch by hand. In the spring of 2010, the family opened one of the few bottles they had of that vintage and were taken aback by the extraordinary character of the wine. Inspired by the wine, they decided to carry forward with this meticulous approach with the 2010 harvest, destemming each individual grape by hand. Nebbiolo is notoriously difficult to de-stem as the stalks are naturally fragile.
