Made with milk from grass fed cows that have been rotationally grazed on their farm in Dublin, this cheddar is another Veldhuizen signature. Aged for approximately 6-8 months in a cave that was built into their hillside, it is a firm yet creamy cheese with the perfect sharpness that makes it so distinct.
