Available as a 6# Whole Wheel only. Not all Manchegos are created alike! Hand selected by Essex St. Cheese Co., this cheese is made at a ranch that's been in operation since the 1870's. This is one of the only Manchegos that is made with milk from a single herd and aged with an unwaxed rind. By allowing it to develop a natural rind, the cheese flavor develops a mellow yet balanced flavor of sweet almond and spice notes that never get too harsh.
