At Ames Farm, Purple Loosestrife Honey is a true rarity, produced only once every 5 to 8 years when the conditions are just right for this vibrant wildflower to yield a full nectar flow. The nectar and honey has a noticeable neon, orange to yellow color.   The flavor profile has an initial butterscotch flavor and aroma that unfold into a floral component and then leaves a slightly bitter finish reminiscent of Italian Chestnut honey. This is one honey that changes in flavor in storage and the bitterness is most notable when its fresh in the fall. This honey  is a cheese mongers dream accompaniment, and pairs well with strong flavored cheeses. Since this raw honey is unheated and therefore contains the original antibiotic and medicinal properties that the bees produced, it may be liquid, partially liquid or crystallized.
