Honduras, San Vicente-Honey. It’s an exceptionally sweet coffee from one of the most highly regarded producers in Honduras, Benjamin Paz. Hailing from the Santa Barbara region, Benjamin Paz’s lots regularly win Cup of Excellence awards, challenge people’s palates, and push the boundaries of coffee growing and processing. This lot is one of his “normal” lots, but still shows the excellence in his work. Incredibly clean, sweet like tootsie rolls, delicate acidity in the background, this is an approachable, luscious coffee. In the roaster, it trends towards slightly higher end temperatures, so we get a wonderful depth out of it. Process: Honey Region: Santa Barbara Notes: Maple, Cola, Grape
